French Toast

Two things you need to know about this French Toast:

  1. It is fast, easy, delicious and you can make it using whatever milk you have in the fridge.  We have almond milk in the fridge, so I used almond milk – for no other reason other than it lasts significantly longer than regular milk.
  2. The recipe:

2 Eggs

1 cup milk – almond milk, half and half, coconut milk (take your pick)

1/4 tsp salt

1 tbsp granulated sugar, honey or maple syrup

1 tsp vanilla extract

1 tsp ground cinnamon

8 slices bread

  1. Whisk together eggs, milk, salt, sugar, vanilla, and cinnamon in a flat-bottomed pie plate or baking dish. Place bread slices, one or two at a time, into the egg mixture and flip to make sure both sides of bread are well-coated.
  2. Melt butter in a large skillet or on a griddle. Place bread slices in skillet or on griddle and cook until golden brown on each side, about 2-3 minutes.
  3. Serve immediately or keep warm in the oven until you are ready to serve, but no longer than about 30 minutes.
