Nutella Peanut Butter Cookies

To celebrate the New England Patriots advancing to the NFL championship game, I decided to make Nutella Peanut Butter cookies.  I mean, what says “I’m so happy that the Patriots are making their 9th Superbowl appearance” better than Nutella and peanut butter combined in a cookie. Nothing.

 

Nutella Peanut Butter Cookies

 

Ingredients

 

1/2 cup unsalted butter, room temperature

3/4 cup smooth peanut butter

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 egg

1/2 tsp vanilla extract

1 3/4 cups flour

3/4 tsp baking soda

1/4 tsp salt

1/4 cup Nutella

 

Directions

  1. Preheat the over to 350 degrees
  2. Beat together the butter, peanut butter and sugars by hand or using an electric mixer, until light and fluffy (about 2-3 minutes)
  3. Add in the egg and vanilla and beat until well combined
  4. In a separate bowl, combine the flour baking soda and salt
  5. Using the mixer (or by hand) slowly add the dry ingredients into the butter and sugar mixture until just combined, careful not to over-mix
  6. Fold in Nutella with a spatula until well distributed throughout the dough (you are going for a “marbled” look here)
  7. Cover the dough loosely with saran and chill in the fridge for about 15 minutes
  8. Roll the dough into small balls and place them about one-inch apart on a greased cookies sheet
  9. Place in oven and bake for about 10-12 minutes, until edges are lightly browned
  10. Allow cookies to cool on the pan for two minutes before transferring to a cooling rack to let them cool completely

 

Where there is an option to do something by hand or use the electric mixer, I highly recommend the latter.  Don’t make the same mistake I did.  Not everyone can be a hero like Tom Brady.
