Sunday Morning Banana Bread

As the weekend rolls around I usually find myself with ripe bananas.  What do you do when life gives you ripe bananas?  Make banana bread.  Here is my go-to recipe that I’ve adapted over the years:

 

Sunday Morning Banana Bread

 

Ingredients

1 2/3 cup all-purpose flour

1 tsp baking soda

1/4 tsp cinnamon

1/2 tsp salt

1 cup + 2 tbsps white sugar

2 eggs (room temperature)

1/2 cup canola oil

3-4 ripe bananas, mashed

2 tbsps sour cream

1 tsp vanilla extract

2/3 cup toasted and chopped nuts (walnuts, pecans, pine nuts – I used pecans this time)

 

Directions

  1. Pre-heat oven to 350 degrees F and line bottom of a loaf pan with parchment paper
  2. In a medium bowl, sift together the flour, baking soda, cinnamon and salt
  3. In a large bowl, beat sugar and eggs with a whisk until fluffy (about 10 minutes)
  4. Drizzle in oil. Add mashed bananas, sour cream and vanilla
  5. Fold in dry ingredients and nuts
  6. Pour in loaf pan
  7. Bake for about 45 – 60 minutes
