As the weekend rolls around I usually find myself with ripe bananas. What do you do when life gives you ripe bananas? Make banana bread. Here is my go-to recipe that I’ve adapted over the years:
Sunday Morning Banana Bread
Ingredients
1 2/3 cup all-purpose flour
1 tsp baking soda
1/4 tsp cinnamon
1/2 tsp salt
1 cup + 2 tbsps white sugar
2 eggs (room temperature)
1/2 cup canola oil
3-4 ripe bananas, mashed
2 tbsps sour cream
1 tsp vanilla extract
2/3 cup toasted and chopped nuts (walnuts, pecans, pine nuts – I used pecans this time)
Directions
- Pre-heat oven to 350 degrees F and line bottom of a loaf pan with parchment paper
- In a medium bowl, sift together the flour, baking soda, cinnamon and salt
- In a large bowl, beat sugar and eggs with a whisk until fluffy (about 10 minutes)
- Drizzle in oil. Add mashed bananas, sour cream and vanilla
- Fold in dry ingredients and nuts
- Pour in loaf pan
- Bake for about 45 – 60 minutes
